Ingredients
1 lemon (zested and juiced)
3 cloves of garlic (finely chopped or made into paste)
1 teaspoon oregano
1/2 teaspoon thyme
1 1/2 teaspoon salt + pepper
1/8 teaspoon of cayenne pepper or chili powder (optional)
2 tablespoon of butter
Two Cornish hens (1.6 pounds each)
1. Turn oven to 375 degrees (convectional bake).
2. Mix all ingredients in a bowl except the hens.
3. Pat hens dry with paper towels.
4. Add half of the mixed seasoning under the skin and the rest all over the hen.
5. Add a drizzle of olive oil on both hens.
Bake for 1 hour. Basting every 20 minutes with it's own juices.
I used two small hens but this recipe works with chicken as well. The chicken is ready when it hits 165 degrees fahrenheit (75 celsius) or when you poke the breast with a knife and the juices run clear.
Serves 4 people.
